My WordPress themes work with WordPress 3.0.4 (latest stable version) without any known issues.
Have an issue with WordPress 3.1 RC1 with Talian 5, the new WordPress Multisite 3.1 admin menu (shows for logged in users all the time!) is messing up the display a little**. I fixed the problem only for WordPress development to change it to another format that messed it up again, so waiting for just before the release before fixing it again.
**They’ve only gone and forced 28px padding at the top of the page so they can fit in an admin menu (will show on pages like this one if you own the blog and are logged in) which means any themes using absolute positioning (that’s a LOT of themes) will be messed up, then they changed it to 28px margin which might be worse (I’d added a fix for the padding problem, but it doesn’t work for margin).
Not sure what you mean about plugins? The themes don’t need any WordPress plugins to work.

Change to
